We were at dinner with friends who own a bar outside Denver when a text came in from their bar. A bartender said they were out of something. They knew they weren't, because they remembered ordering it, and they told the bartender where to find it. From memory. In the middle of dinner.

That started them talking about what running a bar actually takes. They weren't complaining about software. They were describing the evenings that come with owning a bar. Prices keyed into the register one at a time, costs chased down through spreadsheets, so much of it done by hand. Every tool they'd tried did parts of it, and they were always the glue.

We weren't at that table looking for a business idea. The conversation stuck with us anyway: why do they have to do any of this?

So we built an inventory prototype to help our friends, and it snowballed from there.

The independent owners we've talked to have mostly given up looking for software that works, or that they can afford. They're running on spreadsheets, sticky notes, or a bar inventory tool that doesn't fit how they work.

A chain's smallest location still has a company behind it. Someone whose whole job is watching cost. A distributor relationship that gets a better price than a single bar will ever see. A system that pushes a price change to every register in the group overnight. Staff whose job is the numbers, not the pour.

An independent bar has none of that. It has one person who orders, tends, counts the bottles, and updates the register by hand, usually after close, on top of everything else the day already asked of them. That's not a skill gap. It's a staffing gap, and it's structural: no owner running one room is going to hire an analyst.

So we built the analyst, and pointed it at the room that can least afford one. The chains could pay us more. We believe an owner's time should go where they choose, not to the paperwork.

That's who Pour5 is for. The owner-operator running one to five locations: the person who buys Pour5 is the one who uses it, on the floor.

We are independent owners too. Husband and wife in Erie, building something of our own. We know what it is like to carry the weight of responsibility. There is no one above us to hand things to, and no clocking out. If we don't do it, it doesn't get done. That is the difference between making it and not. We build for that owner, because we are that owner.

Most software for bars is built by smart people from outside the trade, around what makes sense to them. So you do things its way, and spend years translating between how it works and how your bar works. The software calls that "learning the system".

We're from outside the trade too, so you're the expert on how a bar runs. There's no sales floor and no support queue yet, just direct conversation, and what you tell us shapes how Pour5 works.

So we start from your bar: its layout, your menu, your names, your margins. Connect your register and Pour5 learns your vocabulary, so what comes back looks like your bar and not like someone's software.

And it has to fit your day. You open Pour5 in the middle of a shift, to find a bottle or check what just came in, and again after close. So it has to work the first time, with a line at the bar or when you're tired and want to go home.

Say it out loud and it can be said two ways. Pour five, or pours. Both are the name. The mark is a jigger, and what it is pouring is a Roman numeral five.

None of that helps anyone run a bar. We mention it because we make everything this way. Most of the care in a piece of work never shows from the outside. Nobody would have noticed if we had not bothered with the jigger, and nobody will notice most of what went into the rest of it. We would have known.
